If you’re going to get out to hit one gastro-hotspot this summer, make it Mews, in Baltimore, East Cork. Set up by James Ellis, Robert Collender and Luke Matthews, this eatery located in a converted coach house, this beautiful restaurant is utterly seasonal and unique.

There is no menu, merely a list of the incredibly fresh, just-sourced ingredients the tasting menu will be based on, served ‘family style', to share.

Think: globe artichoke, Irish buffalo ricotta, langoustine, rock sapphire and wild leek, and you get just a hint of the inspired edible experience you’re in for.
