ARDSALLAGH GOAT'S CHEESE BRUSCHETTA WITH TOASTED HAZELNUTS

Ingredients

2 slices bread

1 drizzle olive oil

2 tbsps redcurrant jelly

160g Ardsallagh soft goat's cheese

100g rocket leaves

1 pinch salt, and black pepper

50g hazelnuts, toasted and roughly chopped

1 drizzle balsamic vinegar, to finish

Overview

This is one of our most popular goat’s cheese dishes, at home It makes a perfect quick supper.

Method

  • Drizzle each slice of bread with a little olive oil. Toast under a hot grill on one side, now spread the redcurrant jelly over the untoasted side, then spread each slice with the goat’s cheese.
  • Place back under the Grill for a few minutes until nicely toasted.
  • Place the bruschetta on the serving plates, toss the rocket in olive oil & seasoning, add the hazelnuts and serve with the bruschetta, finishing each one with some good-quality balsamic.
