2 cups kale

3 red onions

100g creamy goat's cheese

2 tbsps olive oil

120g spelt pasta, or brown rice pasta, or pasta of your choice


Pasta with kale, red onions and goat's cheese. This is by far the best dish I have ever had that has kale in it, no joke. And it's super duper easy to make, promise!


  • Chop the red onions into strips and throw them into the frying pan with the olive oil. Turn the heat on half way and leave to cook slowly and caramelize for 15 minutes. Stir occasionally. If they look like they’re burning then throw a little water on there, not too much, just a little. Low and slow baby, low and slow.
  • While the onions are cooking boil the kettle and cook your pasta as per packet instructions. Throw the kale into the onions and cook for a further 5 minutes.
  • Once all is cooked, throw the pasta into the red onions and kale and then sprinkle with the creamy crumbled goats cheese. Season with salt and pepper and serve.
