Ingredients
4 sausages
2 tbsps olive oil
8 potatoes, peeled and thickly sliced
3 red onions, sliced
3 garlic cloves, chopped
1 knob butter
1 pinch salt, and black pepper
1 handful parsley, chopped (optional)
Overview
Find the best quality sausages you can for this dish, which makes a very good addition to brunch. Artisanal and speciality sausages are now widely available throughout the country, and many of the best producers of good pork also make exceptional sausages, which lifts the dish into another realm of deliciousness.
Method
- Heat a cast iron grill pan and cook the sausages over a moderate heat until fully cooked, then set aside to keep warm.
- While the sausages are cooking, heat the oil in another large shallow pan.
- Sauté the potatoes until just turning golden brown, add the onions and continue to cook for another 4-5 minutes.
- When the potatoes and onions are just cooked, stir in the garlic, butter and season well.
- Add the parsley just before serving with some tomato relish.
