Remember cloud bread? This practically carb-free alternative to bread became the healthy food trend of early 2016, but it disappeared as quickly as it appeared. Interestingly, it's at peak popularity right now, and I think I know why. It has nothing to do with bread, and everything to do with eggs. Cloud eggs are the new cloud bread. They're actually pretty similar, which explains why people have been searching for cloud bread again lately. Like cloud bread, cloud eggs are low in carbs and provide all the protein and good fats you'd expect from an egg. They're also immensely Instagrammable, which is just as important as flavour when it comes to food trends these days.

The Method

I'm always happy to jump on a food trend bandwagon, so I gave cloud eggs a try. The method is simple. Start by separating your eggs. Whip up the egg whites until they're stiff, and gently fold in any extras you fancy. I chose ham, mature cheddar, salt and pepper. Pile your egg whites onto a lined baking tray, and use a spoon to create a little nest. Bake in a preheated oven (180C) for 5-8 minutes, until they're just beginning to brown. Remove the egg whites from the oven and then gently fill the nests with whole egg yolks. Return them to the oven and cook for 3-5 minutes until the yolk is cooked to your preference.

The Verdict

My cloud eggs were surprisingly tasty. I expected them to taste like nothing, but they were like a very light cheese soufflé. So light, in fact, that they disappeared as soon as they hit my tongue. And that's where the disadvantage lies. They may be low in calories, but they're not very filling. The preferred serving methods of Instagrammers seems to be on toast, or with a side of veggies, but honestly, it all just seems like too much effort for little reward. An omelette is tastier, more filling and less hassle.

Will cloud eggs disappear as quickly as cloud bread? Probably. But don't worry, a new food trend will be along shortly to take its place. I hope it's chocolate lava cake.
